Overnight oats are a perfect take-to-work breakfast. Made the night before, you literally just grab from the fridge as you leave home in the morning. Store in individual portions in leak-proof jars to avoid leaking.
INGREDIENTS (serves 2)
2 tablespoons chia seeds
1 tablespoon pumpkin seeds
1 cup fresh or frozen mixed berries
1 grated apple or pear
11/2 cups milk of choice (nut or dairy)
Pinch ground cinnamon
Chopped nuts and seeds (optional)
Place all the ingredients in a glass bowl or container and mix well. Cover and leave overnight. If you prefer a smoother porridge blitz quickly in the blender first. A quick and easy breakfast that is nutritious and tasty.
